Brew Instructions
1 tbsp per 250mL at 85-90°C for 3-4 min. Careful of the water temperature – too much heat will kill the amino acids that play a role in sweetening the tea, while water too cool will stunt the flavours. Over-steeping will lead to astringency. As always, start conservatively and extend steep time as per your preference.
